The vineyards
The winery’s vineyards, known to be skeletal soils, are located on the hills surrounding the town of Sarzana and are all characterized by a constant presence of clay. In order to best manage this difficult soil, specific operations such as green manuring, planting of different crops and mechanical tillage are necessary to help the expansion of the vine root system, reducing soil erosion and maintaining a good percentage of organic matter.
Special attention is paid to the winter pruning technique – mainly guyot – and spring pruning, also referred to as “green” pruning, through which an optimum balance between growth and production is sought.
Finally, grape ripening monitoring, from flowering to veraison, as well as subsequent tasting of the grapes and chemical-physical analysis, allow to organize the harvest making the most of each plot of land.
